 ・インドネシアの食文化
 西ジャワ農村に住まうスンダ人の生活文化としての食文化に関する言語人類学的研究。フードセキュリティの文化人類学的研究。ジャカルタおよびバンドゥン市における都市生活者の食生活の変容など。

・ハラールビジネスとムスリム消費者の食選択
 インドネシアをはじめとする東南アジア諸国のハラールフードビジネスとハラール認証制度の動向。インドネシア人ムスリム消費者のハラール食をめぐる情報戦略と食選択行動。日本のインバウンドビジネスにおけるムスリムをはじめとする宗教的禁忌をもつ訪日外国人観光客対応の指針。

・食嗜好と外来食のローカル化/グローカル化に関する文化人類学的研究
 人の食嗜好は、まず、幼少時から親しんだ味や価値観によって形成される。一方で、 食をめぐる文化的意味付けは、グローバル化と科学技術の発展の中で、企業・メディア・SNSを使ったインフルエンサーなど多種多様な情報発信者の影響をうけて、目まぐるしく変化を続けており、これが人の食嗜好の変化につながってくる。現代に生きる人々の生活文化としての食文化の実態や嗜好性とその変容をあきらかにし、また外来の食を受容する際にどのようなローカル化が行われているかを分析する。
